Crockpot Chronicles: Slow-Cooked South African BBQ Chicken

You will learn quickly, if you haven’t already, that I love a good crockpot recipe. Something about letting it do the work for you all day, while you do a hundred other tasks, makes it all very appealing. And usually the recipes are pretty simple. (Whipping up sticky-rice stuffed duck is not on my bucket list.) So here’s my latest discovery.

3lb. boneless skinless chicken thighs
1-1/2 cups KRAFT THICK ‘N SPICY Brown Sugar Barbecue Sauce
1 cup chicken broth
1 onion, chopped
1/2 cup dried apricots, quartered
1/2 cup golden raisins
1 Tbsp. curry powder
3 cloves garlic, minced
6 cups hot cooked long-grain brown rice
PLACE chicken in slow cooker. Combine all remaining ingredients except rice; pour over chicken. Cover with lid.
COOK on LOW 8 hours (or on HIGH 5 hours).
SERVE over rice.
