Crock Pot Creation: Pulled Pork Sandwiches

Today was a cold, rainy day here in The Prairie State, so the crock pot was calling my name. The house just feels warmer when it smells better. Know what I mean?

So, of course I complied. Who am I to say no to a crock pot?

I’ve seen variations of this recipe floating around Pinterest, so I decided to try it with my own minor adjustments.

Meals like this one make me want to kiss my crock pot. Odd? Maybe. Justified? Try this recipe and you’ll understand what I mean.

5 ingredients make this recipe a breeze.

Here is what I used:

1. 3.5 lbs. of boneless pork chops {3.5 – 4 pounds is fine}

2. Barbecue sauce {any kind will do}

3. 1 tsp. dry mustard

4. 1 tsp. garlic powder

5. {Optional} 3/4 c. brown sugar

Here is what I did:

1. Pour half a bottle of barbecue sauce into the crock pot.

2. Stack the pork chops on top of the sauce.

3. Pour the rest of the barbecue sauce on top of the pork chops.

4. {I put a tiny bit of water into the empty barbecue sauce bottle and swished it around to make sure I got it all.}

5. Add the dry mustard and garlic powder.

6. {If you like a sweeter barbecue flavor, add brown sugar.}

7. Spread the mixture around so that it covers the meat as much as possible.

8. Cook on high for 4 hours, stirring once an hour.

9. At the 4-hour mark, I used a fork to pull the pork apart. I then submerged the pulled meat in the sauce for 20 more minutes.

10. I served the sandwiches on freshly baked whole grain rolls with kettle chips and salad.
